Maple syrup is graded based on its transparency (or lack thereof) and taste by the Canadian Food Inspection Agency. Category 1 syrup is a light to medium-coloured syrup; Category 2 is an amber syrup. Category 1 and 2 syrups have tastes to match their colour (lighter syrup, lighter taste). Category 3 syrups are darkest. Used industrially, they cannot be sold commercially.
