The real stuff is expensive

It’s expensive, but logically so. To make maple syrup you have to tap particular kinds of trees that grow in particular places at a particular time, and even if you’re amidst a forest, you’re likely only getting a litre (about a quarter of a gallon) of syrup for the entire yield of sap. Maple syrup is a precious commodity precisely because its scarcity isn’t artificial.
