Blueberry Blossom Honey

We’ve heard a lot about the dwindling bee population the world over, but up in Canada our buzzy little friends have been pollinating blueberry shrubs for centuries, and providing the genesis of a Canadian delicacy: blueberry blossom honey. Acre upon acre of blueberries in Ontario and New Brunswick feed this cottage industry, and though the honey does not have a “berry” taste it offers a unique sweetness you won’t find anywhere else in the world.
